4.  Refrigerate overnight if possible, but a minimum of 30 mins.<br />
5.  Once the base has refrigerated, preheat an oven to 300 F.<br />
6.  Bake the crust for 30 minutes. Cool completely.</p>
<p><span style="color: #800080;"><strong>To make the cheesecake topping:</strong></span><br />
1.  In an electric mixer, fit the flat beater.  Beat the cream cheese on medium until smooth.<br />
2.  Slowly add the granulated sugar and beat until smooth.<br />
3.  Add 1 egg at a time, beating well after each.<br />
4.  Stir in the sour cream, the Bailey&#8217;s Irish Cream, the espresso powder, and mix until smooth.<br />

2.  Place the springform tin in a large roasting or baking pan, then place on the oven rack.<br />

4.  Bake for 1 hour 15 mins. Test it is cooked by gently shaking the pan.  The cheesecake should be set but not dry.<br />
5.  Transfer the tin to a wire rack and cool for 30 minutes.<br />

<h3><span style="color: #800080;">Directions:</span></h3>
<p>In a saucepan, add 4 cups of strong fresh coffee, ½ cup of Irish whiskey and ¼ cup sugar. Heat up, but do not boil.</p>
<p>Whip 1 cup of whipping cream until it is light, then beat in 2 tablespoons of sugar and 2 tablespoons of whiskey.</p>
<p>Pour the coffee into coffee mugs and spoon the cream on top.</p>
<p>Serve.</p>
