Pumpkin Chili

Ingredients:

  • 4 cups of water.
  • 1 can of canned crushed tomatoes.
  • 3 can of red kidney beans.
  • 1 can of pumpkin.
  • 1 cup of chopped onion.
  • 1 cup of chopped red bell pepper.
  • 1 cup of uncooked bulgur.
  • 1 cup of chopped green chili.
  • 1 tablespoon of chili powder.
  • 1 teaspoon of garlic minced.
  • 1 teaspoon of ground cumin.
  • 1 teaspoon of salt.

Directions:

Drain and rinse the beans.

Put all ingredients in a large pan.

Over a high heat, bring to the boil. Reduce to a medium-low heat and simmer for 35 minutes.
